If I hit X to "reject" an image, what happens to that image?

A reject flag is added to the catalog (not the metadata) and the thumbnail gets dimmed.
You can filter “All Photographs” for rejects using the attribute filter.

You can also delete all rejected photos via Photo->Delete Rejected Photos or Ctrl-Backspace
