I have something really strange happening. Ever time I create keywords for a photo and press enter the photo thumbnail disappears. However, when I check my folders outside of Lightroom the photos are there. I am perplexed!

You have either a Filter set or you are in some other Keyword view or even a smart Collection and the addition of the new keyword does not Fit the Filtering of the smart collection or keyword name view.

Go to All Photographs and search for that image. Oh and Turn Off any filters you have set.
