How can I turn off auto-adjustment of colours on B&W conversion in latest LR CC Classic? It looks like this option disappeared from preferences. Thanks.

Yes, the option in preferences was removed.

It is easy to undo the "Auto Mix" -

In the ( HSL/Color/) B&W Panel: Double-click on the words "Black & White Mix" above the sliders.

And then (having done that)-

Make a Preset to 'reset' for future use (that only needs one-click on the Preset)-

In the Preset dialog- Uncheck all boxes except these two and save the Preset.

That option seems to have been removed by Adobe. See this thread: Lightroom 6.7 - black & white auto-mix preferences missing

why was this preference removed?

Generally speaking auto BW mix is not an improvement,

The way I turn it off is to alt-click the "Black and White Mix" but yeah double clicking it works as well, it's just  pesky to have to do it everytime
