I would like to change my Develope default settings - The two obvious methods don't work.

There is no option to do this under the Develop menu and when I hold down the ALT key the "Reset" button doesn't change.

I'm using Classic version 9.2.1 and it (doesn't) work the same with Nikon and Fuji raw files.

What am I doing wrong?

I am guessing you meant this question for the Lightroom Classic or previous versions of the desktop-based versions of Lightroom. This Lightroom forum is for the cloud-based application.

If so, it might help to repost within the Lightroom Classic forum.

It all changed- in Lightroom Classic 9.2 (February 2020 release)
