While clicking images in pro mode using inbuilt camera app of lightroom mobile Android there should be an option for semi manual exposure.
For eg, we set the shutter speed to 1/100s & them based on the enviourment the app automatically adjusts ISO.
For creative use we can fix both EV+/- and Shutter speed or ISO to be fixed & the third value i.e ISO or Shutter speed remains on Auto mode, using AI or some smart algorithm to maintain the exposure of the scene by adjusting the values
