Is there a feature in lightroom that will keep stacks collapsed by default? For example, when I take an image from lightroom into photoshop then back, it is in an expanded stack. Can I make it so it is collapsed by default when I go back into lighroom?

No, there isn't. Assuming you use Lightroom Classic, not Lightroom, there is a keyboard shortcut for collapsing a stack, however. Hit 'S'.
