Can an Action Save A Copy AND automatically overwrite the "copy" in the File Name during Save?

I usually save multiple versions of my files. I save the PSD I'm working on, but then I collapse everything and Save a couple copies as a JPEGs. 
I'm hoping there is a way set up an Action that will Save a Copy, which that function already automatically tacks the word "copy" onto the end of the file name, but I'd like to have the Action overwrite the word "copy" with something like "cropped." And I would like to save the files as JPEGs, not PSD which is the default in the drop down.
From my research, if it is possible it looks like something like that might require scripts, which I'm not very knowledgable about so I would love some guidance on that please! I appreciate your help, thank you in advance.

If it matters, I am working on the latest Mac OS.
