Set your foreground swatch to purple and your background swatch to orange (Tools panel), then use the Foreground to Background gradient.

A second way is this:

  • Gradients panel (Window menu, not option bar)
  • Gradients panel menu (four lines at top)
  • Legacy Gradients to add them
  • Open Legacy Gradient and open Legacy Default Gradients

After you add them from the Gradients panel, the Legacy gradients will also appear in the options bar.
