I have been using Photoshop for 20+ years. I have a flattened sRGB file that I need to save as a JPEG file. Done it 1,000 times. Suddenly JPEG does not come up as an option when I click Save As. Suggestions?

I think it's important to understand why.
If your file is flattened, then it can't be layers causing the issue... So you need to look at the other points of failure - Bit Depth such as 16 and Alpha Channels.
Enabling Legacy Save As bypasses these issues, except for images in 32 bits per channel mode, which first require tone mapping down beforehand. Export As can export a JPEG from a 32 bpc doc as it has built-in tone mapping.
