I have a question about why the color changes from one document to another? I have two pieces with the same resolution of 240, when I pull the car from the right to the left in this case, the color changes.

Why is that? Both have 16bit

One of the images is untagged, it doesn't have an embedded color profile. Never work with untagged images. If there is no profile, you need to assign one, and it should be the one the image was originally created in.

I think I found the reason, I had it on "Don't manage colors" when I created a new document.

Both images must have an associated (embedded) ICC profile and if you want to drag from one to the other like that, ideally the same ICC profile (so a conversion doesn’t have to take place during pasting).

D.Fosse is absolutely right about that.
