I have made a setting in Finder that my image files is to be opened with Adobe Photoshop 2025.app
But each time I get an upgrade of Photoshop (Beta).app it changes to that application to open my images.
The (Beta).app is very heavy and it slows down my working process so I prefere PS 2025.app.
It is annoying that I have to change my Finder-settings each time.
Is there a way to make my settings as default?

That's the way macOS works. The most recent install takes over the file associations unless you change them back.
One way to solve your issue is to uninstall the Beta, which is for testing and finding bugs to report to the developers.
