How do I turn off the childish useless welcome screen and the AI stuff and let us just work like the adult creatives we are?

Go to Preferences > General and uncheck "Auto show the Home Screen".

AI features can't be turned off, you can elect not to use them... The Contextual Task Bar is for more than AI and is at the foot of the Window menu if you wish to hide it.
