How to choose the end and start (joint) photos when creating a 360° panorama (non spherical)

I've been creating these for years. The other day I did a project with 15 panos to showcase the views of a new apartment building. The main view is the lake and for some reason the stitch point is right on the main view in many of the images. Of course, you'll never get the joint perfect when viewing so I would prefer if the joint was 180° behind the lake view. I cannot seem to find a setting or method of choosing this point. Any help?
