I accidentially made one layer out of my file - now i lost all the info - how can I regain it?

@Janina22570379cfn9 if you closed out of the file you would have lots the history states and considering you don't have a backup you're pretty much out of luck.

You should always keeps backups of your important files, including doing incremental saves as you work

True that - I still have a week old backup I made manually. 

For the next case I am looking for the function to make lets say 10 backups in the folder documents - but I cannot find this function. Do you know where I can activate that?

There is no such feature in Photoshop but I'm pretty sure it can be scripted, I'll tag @Stephen Marsh

There are various scripts posted on the forum to create versioned saves using sequential numbers or date/time stamps.
