Why are my tiffs opening as default 16 bit ?
Because that's how you set it in Lightroom or Camera Raw.
That said, I'd recommend keeping it 16 bit while working, and then if you need 8 bit output convert at the end. You should store your master files as 16 bit.
Many thanks. It was me being a bit slow. They were files sent to me by a business contact and I assumed naively that they were 8 bit. I tend to work in 8 bit as I batch process to jpeg.
JPEGs are always 8-bit per color.
16-bit (high bit) for editing is vastly preferable:
Then AFTER edting, save a copy as JPEG if that's what you need or want, and that copy will be 8-bits per color.
