@nelize_l You can still install Photoshop 2023 and version 22.1 via the Creative Cloud desktop app (Click the ellipses ... button next to Photoshop application to see "Other Versions").
That is about it for options. It's not just that your OS is not supported with the latest version, it's more that your Mac GPU won't be able to support it as well.
You don't have to upgrade your machine - it's in your control to choose to remain on that specific Mac model/OS but it also means you are choosing to lock in whatever version software was last compatible with it and not attempt to upgrade either without risking operability.

Adobe still has macOS Big Sur 11.x listed in the Photoshop System Requirements.
It may not be becuse of Big Sur, but your Macs GPU and/or CPU don't meet the requirements like not having AVX 2 and so on.
What particular features are not working?
What model and year Mac do you have?

Yes, that's a known requirement. The Remove tool requires macOS 12.6.3 or later.

You're likely to encounter these issues when you try to run new features such as the Remove tool on a legacy operating system such as Big Sur. It's also likely that this version of Photoshop is the last which will support Big Sur.
