When I use CTRL and + or - keys it zooms way too much. It goes from 100% straight to 200% when going in. When zooming out from 100% it takes smaller steps, but what if I want to have the same steps when zooming it? I would like it to go from 100% to 125% or 150% at the very least. Sometimes the zoom is too much and I know that I can set the exact value in the lower left corner, but I want to work fast and not having to type when painting. Any help, please?

Others may chime in but I think the only way to control the increment of the zoom is to modify a keyboard shortcut. Zooming in below 100% jumps in smaller increments however as you noted as soon as it hits 100% ctl + zooms by hundreds. Someone here may have a script available that allows for smaller increments if you don't want to modify a kbsc. You could also try one of the AI engines to write a script for you and test it out.

Would the Z key + moving the pen or mouse work for you, in your painting workflow? B then takes you straight back to brush.

I don't believe this is possible. Zoom level cannot be scripted or recorded in an action (beyond the existing menu and keyboard commands) and typing in the document window or Navigator (or using the arrow keys) is the only way to set an exact level. However, if you click the zoom level field and then use Shift-arrow you can adjust it in 10% increments, this is probably the best you'll get.

Does Ctrl Space left click and drag sideways work for you? You can certainly manage a less than 10% zoom ratio change that way. I can't say for sure, but I am thinking that zooming with the mouse wheel is a lot less than 10% increments.
