Photoshop crashes when using Apple Emoji

Hi,

I notice, since the last update of Photoshop that PS crashes each time i use Apple Emoji.
When i copy / paste on emoji, it display automatically the EmojiOne Font. When i change to Apple Emoji, Photoshop crashes.

Also, if i open and old file with Emoji and i select the emoji's layer, Photoshop crashes too.

I don't know if i am the only one. What can i do about that ?
I am on Mac Os Big Sur (Apple M1)

Does it freeze - stop responding to input and you have have to force quit? or Crash - app disappears to the desktop and you have to relaunch? 

They are two very different behaviors.
