can i delete older versions of photoshop or premiere from my mac?

Yes, you can remove older versions using the Creative Cloud app. Details here:

well the question is if older versions of PS need to be remain installed…. or can i delete/uninstall them ? thx

You can delete older versions as has been explained. However if a problem arises with a new release, it's a good idea to have a previous version, especially if you are busy with a deadline.  If you just want one version, give it a month before deleting the previous one.

Also backups are important and your Mac comes with Time Machine which works out of the box and is easy to set up.
