This is the most overly complex, terribly supported and utterly non-userfriendly program possible. Everything is hidden behind a backdoor, aspects that should communicate or connect don't, etc.
I've spent hours attempting to troubleshoot the issue of any color selector being gray only, through this terrible forum, Google, articles & even Youtube every single "solution" has not resolved the issue. "Set RGB color" "the image is grayscaled" "press Q" and "you're in a picker" all 100% obvious things, which even after triple rechecks to ensure that I am not the cause of the issue, the issue still exists.
This platform being the mainstream is an absolute joke.

If NVIDIA graphics, make sure to use the latest Studio Driver from NVIDIA (NOT the Game Driver).

Try resetting the tools and/or preferences.
To restore preferences quickly using a keyboard shortcut:
Press and hold Alt+Control+Shift (Windows) or Option+Command+Shift (Mac OS) as you start Photoshop. You are prompted to delete the current settings. The new preferences files are created the next time you start Photoshop.
Note: Using the keyboard shortcut, preference files for custom shortcuts, workspaces, and color settings will also be reset to default.

Could you please post screenshots taken at View > 100% with the pertinent Panels (Toolbar, Layers, Channels, Options Bar, …) visible?

Photoshop is a professional-grade tool. As is the case for any professional tool, it's the user's responsibility to learn how to use it. You won't find, say, AutoCAD particularly easy either.
Photoshop is optimized for speed, efficiency and advanced capabilities. There is no way it will ever be "user friendly". For that there is Photoshop Elements and other free or inexpensive consumer-level image editors, of which there are plenty.

Some of us use Photoshop professionally and don't find it to be a huge problem.
And maybe if you explained the problem and showed us some screen shots, we could help.
