There's a couple of videos on youtube that show how to do this, but they're older videos from years ago & are long complicated methods.
is there any recent additions to photoshop that speeds up ability to remove background from signatures?

What is the background composed of? What version of Photoshop are you using?
Can you post a screen shot of at least part of the signature so we can give you more effective solutions?

Do you mean the white background? If so, don't use a jpeg, because jpeg does not support transparency. Use a psd, tiff, or png, which all support transparency.
Since this is a Photoshop forum and you didn't mention a use, shall we assume you want to use the signature in Photoshop? If so, you can keep it in a Creative Cloud library, then drag and drop it to the current file.
If this does not answer your question, please clarify.

You want to actually get the signature, not obfuscate it?
Then I guess it all depends on what you define as a signature.
For example, if you recognize the font (maybe there are tools for it), use the same font and type/design it again.
If it's handwriting or artsy stuff, I can imagine it can need several techniques. In some of these, you look at the channels and pick or combine and enhance parts where it is defined best (channel masking).
