From what I see on the attached images yoyu provided, your image isn't "extremely pixelated", just slightly.
What zoom level are you looking at the image at? Because if you zoom in to more than 100% view, the image will look pixelated.

300 pixels is thumbnail size. There's no way to get high quality from images that small.
At 100% you see one image pixel represented by exactly one physical screen pixel. If you zoom in beyond that, all you will see is pixels. Don't zoom in above 100%.
In other words, everything here is normal and expected.
You need to accept that these images are very small, and optimize for 100% view.

Try to resize the large photo to about half the size. Then reduce again to a smaller size after saving the new smaller size. See if that helps.
or save as a pdf. Than open the pdf in photoshop and resize photo at that time.
