Screensharing on your iPad is not a Photoshop question. It's part of iPadOS.

Thank you for your response. I should clarify - I know how to mirror my ipad screen generally but not when trying to model  what I'm doing when using Photoshop. It shows the image but not the menus. I managed to do it once but have since failed to replicate this.
