You can not find Color Fill, Gradient Map adjustment in Photoshop? Click on fourth icon from right at the bottom of Layers panel then choose Solid Color for color filllayer or Gradient Mapfor gradient map adjustment layer.

New Fill Layer > choose option is also available from Layer menu.

New Adjustments Layer > choose option is also avaoilable from Layer menu.

Finally, destructive adjustments are available from Image > Adjustments menu.
