Today I download the latest version of Photoshop 25 onto my Macbook Pro M1.
I then tried to edit images I took the previous day.
I immediately discoved that images would only open in the default mode Preview.
I then tried to change the default to Photoshop 25 which was showing Adobe Acrobat. I tried this procedure several times which made no difference. I then uninstalled Abode Acrobat which then changed default to Adobe Lightroom. I then selected Photoshop 25 as default but it reverted back to Adobe Lightroom.
I have uninstalled Photoshop 25 and reinstalled but this has not made any difference.
My ios version is also up to date.
Can somebody help me?

Photoshop 25 -- meaning Photoshop 2025, version 26.6?
Photoshop 2024 is version 25.12.3.
[both 2024 and 2025 released updates yesterday]
"...would only open in the default mode Preview." I'm not familiar with that "default mode"/Preview. The Preview app?

Unfortunately, Adobe doesn't control File Type Associations (nor does any other software manufacturer), this is managed by the OS alone. During the install process, we tell the OS to update various associations, but these can be ignored, overridden, and changed. So, while uninstalling and reinstalling is good step to attempt to resolve this issue, it may not overcome a deeper OS issue.
One thing to try is to select Other from the Open With list. You can then manually navigate to the Photoshop app file, rather than relying on what may be incorrect links in the list.
It may be worth checking to see if the root cause is something associated with your user account settings. If you create a new user in the OS settings and log into that, do you run into the same issue? See: https://support.apple.com/guide/mac-help/add-a-user-or-group-mchl3e281fc9/mac
