of files that are not included.

the CS2 SDK isn't going to have a word to say about interesting
topics such as universal binaries for Macintosh.

The CS2 SDK does have a document about "Mach-O conversion" - basically meant to help people moving from Codewarrior to Xcode (neither of which are mandatory for building plugins anyway).

Whatever you need to know about executable formats can be inferred from source code and Makefiles (and an Xcode project or two) on my site. Contact me for more information.
