I used to have the ability to save a project as a JPEG/JPG via File > Save As > [drop down] > JPEG, but I believe a recent update has made that capability undoable. Now I need to go File > Export > Export As > [wait a few seconds] > JPG > Choose Location > Save. This is wildly inconvenient.

How do I go back to the other way?

The only options I have currently for Saving As are PSD/PDD/PSDT, PSB, PDF/PDP, or TIF/TIFF.

When I merge layers, it will also let me select PNG.

I little help, please!

The save functionality has changed in the latest PS update.  Use Save a copy to save as JPG.  Read more about it here.  https://petapixel.com/2021/05/18/photoshops-save-as-function-has-changed-on-mac-heres-why/

This was driven by changes in the Mac Operating System, although the changes are applied to both Mac and Windows versions to keep them aligned. After feedback from users, in 22.4.2 Adobe added two new options to Preferences > File Handling. The first al...

The first allows you to revert to the legacy Save As workflow and the second to optionally omit the word "copy" from the filename when using Save a Copy
