You can't change the background clear tone of the organizer in recent versions.
If you see it 'white', then your display is set much too bright. You should see the differences in gray shades for the background of the browsing space (in 'Detailed' view), for the files in stacks/version sets, for the left and right panels.
Brightness seen in the HSB choice in the Info panel:
- Background = 93%
- Stacks = 87%
- Panels = 89%
There is a real difference between those values and the pure 100% white in your images.
