I am new to Photoshop, and am wanting to create a logo. I have used photoshop in the past for basic things. When I watch a video, they have a window full of layer styles, but I only have Drop Shadow, Glow, Bevel, and Smoke. I find this tab by going to layer, then layer style , style settings. I am on Mac OSX Sierra.

What version of Photoshop are you using?
In CC2017 it looks like this - do you have a screenshot

That's all normal for photoshop elements 10.
Your pse 10 has everything its supposed to as far as layer styes go.
Photoshop elements only has a few adjustments for layer styles as compared to photoshop.
Photoshop being photoshop cc or cs6 as examples.

Dave knows the answer to this , but I'll steal his thunder. I'm guessing you have something like this.
Just click the 'fx' icon on the bottom left and in the list click 'reset to default list'
And you will get back all the layer effects. like below.
What you probably did was delete the hidden effects. If you put a check mark beside certain layer effects and leave others empty then you can remove the unmarked ones from the list by going to the fx icon and clicking 'Delete Hidden Effects'
What you then get is a filtered list
