Hallo!
In der Ordneransicht gibt es den Menübutton: "Alle Unterordner anzeigen"
Bei nächsten Start sind die Unterordner wieder geschlossen.
Gibt es eine Möglichkeit die geöffneten Unterordner zu fixieren.

No, you can't keep the option to show all subfolders displayed (including folders without images). My own explanation is that showing all subfolders permanently would slow down the display of the folder tree severely. Showing only the subfolders of a master folder is fast and safe. Showing permanently would require scanning and refreshing the explorer tree for external changes.

The display of the files in the catalog as a tree is fast because it's built on the path already stored and indexed in the catalog, which explains subfolders without images are ignored. It's not a simple copy of the explorer tree which would show everything in your computer, not only image files.
