I own a small print shop and have converted files to cmyk for years using Photoshop 5.5 with no problems.  I now have Photoshop Elements 2020 on my newer Mac and there is no option for cmyk, which is the format I need to send to my digital printing partner. VERY disappointing!  Am I missing someething?

What version of Photoshop would I need to purchase?  I am not at all interested in a subscription plan.

CMYK has never been supported in Photoshop Elements. Quite often you can send images to a print lab using the sRGB color space and the printer will do the conversion. Sometimes it can be problematic trying to do the conversion yourself. However, it should be possible using Colorsync Utility on Mac OS and the buttons at the bottom of that utility.

You are not missing anything.  Photoshop Elements does not support CMYK.  Only the subscription version of Photoshop does.
