You can't (without removing all the existing information).  But, once face recognition has been completed, you can go to single image view in the grid, and use the Mark Face option to add faces that have been missed.

Face recognition gets better with each version - but it's not perfect.

Wouldn't it be nice to have the ability to at least select a Stack or two and run it again!
