I am on photoshop 2021, and I am trying to make a 3D graphic for a client. But as soon as I try to change the extrusion it turns into little parts, or it just goes blank...

Can someone please help me out with this. I have looked online everywhere and I have not found any solution.

Picture 2 is when I move the extrusion.

Have you disable Native Canvas in your Photoshop 2021 preferences.  Photoshop 3d still need to be updated for use in Photoshop  2021 read Adobe known issues. https://helpx.adobe.com/photoshop/kb/known-issues.html
