Colour match multiple images

I have several photographs and would like to harmonise them for a wall display.  Can anyone tell me how to select a colour (for example the blue of a sky or ocean) and change the shade of blue in the other images to match?

Well, there is Image > Adjust > Match Color - but don't expect a magic button. If the quality of the light is very different, the result will look pretty awful.

 

I have more faith in picking dominant colors, like the sky as you mention, and match those. That's most efficiently done with a Selective Color adjustment, which is also very intuitive and easy to control.
