Dialog Boxes Missing Text?

Brand new iMac running Big Sur 11.0.1

Photoshop CC 2019 Version 20.0.10

When I open a dialog box - example Camera Raw, Scripts>Load Files Into Stack, the dialog box lacks text.

How do I correct this?

I'm having the exact same issue after upgrading to Big Sur 11.1
