I would also agree that dodge and burn are too destructive and that it would be better to use some type of adjustment layer and use its mask to do the dodging and burning. Dodge and burn is very useful for adjusting edge detail in a layer mask, where you can target highlights and or shadows.

As the article in the link advises, always keep an original unaltered version of your image, whether you're using dodge and burn or any other thing. As for dodge and burn, though, they are both best used with a light hand. Remember it's "Dodge and Burn," not "Slash and Burn." Play wth the opacity sliders and start with a very light touch and go from there. If you mess up, you just take another copy of the original and go from there.
