How can I edit and export 360 spherical photos with the latest version of PS?

It used to the under the 3D menu, now is under the mesh submenu, but I can't found how to export it and keep all the metadata.

Export is under the 3D menu: 3D > Spherical Panorama > Export Panorama. So far as editing goes, here is a quick guide—How To Edit 360 Photos in Photoshop in 6 Easy Steps—which may or may not be more basic than you're looking for (I don't know your experience level or what exactly you want to do besides export). If that doesn't help, let us know.

All well and good, but I find at the end of my workflow if I want to export the completed 360 equirectangualr image as a JPG file then I do not have any option to set the quality, that dialog does not appear in PS 2020 for Mac OS.  I thus have no choice but to export as an uncompressed TIFF and reopen and save as a JPG in the mormal PS dialog where the quality dialog does of course appear.  This is a BUG that needs to be fixed.

in Windows Version this JPG quality settings dialog is also missing. But worse than this is low res 3D space and no way of setting it higher. Any pixel editing done within panorama destroys the detail in that area. Horrible.
