What steps are required to define, name and store my own crop tool settings (name, dimensions and resolution). Somehow I am missing some steps or sequences. Thanks for your help!

You should be able to select the Crop tool, adjust the size either on the canvas or by entering the dimensions in the Options bar (you might want to press Clear first if there's any preset already selected), and select Ratio > New Crop Preset. A dialog will appear where you can enter a name. Then you can access your custom preset by going back to the Ratio dropdown menu in the Options bar.
