What happened?  

With several layers of different  photos I used to be able to SEE the extracted image.  Now I can't.  It just looks like a layer mask symbol. How do I change back to see the extracted iamge

Are you selecting the image portion of your masked layer, or the masked portion? Also, if you're clicking a mask and hold Opt/Alt, it would disable the image view and only show you the mask.  Can that be what's happening?

Without a screen shot, we can only make guesses. Another thing you might mean is the thumbnails are set to None.

Layers panel > panel menu > Panel options
