This just happened today.
When I open PS the canvas is gone, If I disable the GPU under the performance tab and re-launch the canvas is back.
If I click option-0 to re-center it I am able to see the very bottom of the canvas but can not interact with it at all.
I've never had an issue like this before.
I would like to add that Illustrator works fine.
Computer is 2018 Macbook Pro BigSur 11.2.3

Is this a new computer? Did you recently upgrade your OS? What troubleshooting have you tried so far? Did you try resetting your preferences? Did you try uninstalling and reinstalling Photoshop? Please provide as much information and videos or photos amid you can.

Try resetting the preferences.
To restore preferences quickly using a keyboard shortcut:
Press and hold Alt+Control+Shift (Windows) or Option+Command+Shift (Mac OS) as you start Photoshop. You are prompted to delete the current settings. The new preferences files are created the next time you start Photoshop.
Note: Using the keyboard shortcut, preference files for custom shortcuts, workspaces, and color settings will also be reset to default.
