If you have a bounding box (Paragraph type) like what you have shown, you can convert it to Point type (without the bounding box) by:
Choose Type > Convert To Point Text
You can switch Point type to Paragraph by:
or Type > Convert To Paragraph Text.

How do I get rid of the wierd box? Do I have to delete it all and start text again?

Thank you, I appreciate your help. I was confused until I realized I have to deselect the paragraph first, make sure the layer is selected, then Type/Convert to Point Text.

Are you asking what the text box means? If so, that's the bounding box for text. So, say you want text to be limited to a certain area, you create the box in a particular part of the image by clicking and dragging to create a box, and then when you start typing in text, it will be constrained to that area. If you don't have the bounding box, your text will just continue in a single line.

Your screen shot shows a small text frame with a large type size. Resize the frame bigger if you need to type more than the one letter.
