Considering your present setup the news is not good.

CS3's activation servers were taken down and for a while there was a non-activation CS3 you could get. Now that ship has sailed, and it's no longer there. Adobe's present offerings do not run on Yosemite.

Does this mean that Adobe has robbed me of a piece of software (CS3) I paid over £700 for in the Apple shop?

Adobe owns the software. See CS3 EULA.

https://labs.adobe.com/technologies/eula/photoshopcs3.html

You had a limited, non-exclusive license to use it for however long Adobe could keep making it available.  And assuming you never upgrade your system or try to re-install it, you could potentially keep using it for another 10-12 years.  Unfortunately, reinstalling is no longer an option.  CS3 is officially dead & gone.

Beware of fake Adobe reps who may contact you privately offering to sell you software or take control of your computer. It's a scam, run away!  CS software is not sold legally by any vendor, retailer or country.
