Hello, does Adobe claim ownership on image documents in “.psd” format? I want to learn if it is legal to use this type of documents in compatible free-of-charge softwares (such as GIMP). Because I aim to make a switch to open source systems after license expiration. Thank you.

No, Adobe claims no ownership to the content you create with their tools, but you might not be able to edit features in your psd if the new software doesn't support it. Test before transitioning.
