Use the gradient panel, Window - Gradient.
If you still don't see them go to the top right of that panel and click the drop down menu. Then click on Legacy Gradients.

All theses posts would be avoided, if the legacy gradients menu entry was also added in the option bar, properties menus, and in the right-click contextuals. The brush option bar got the menu entry, not the shapes, gradients, etc.

I am really getting sick of Adobe these days. Premiere is not keeping up with Resolve. Now this aggravation. I tried "Append Default Gradients" and just got a duplication of all of them and can't Ctrl-Z go back. So have to delete each one. I still can't find "legacy". I search in the Gradients panel. Can't find it. The supposed "Answer to this question does NOT have detailed steps on how to do this. Very frustrated. Okay, finally figured it out. Why am I doing Adobe's documentation?
