All I want to do is 2 simple things:
1) Create subtitles on my video
2) put a back background on them with white writing
And it has taken me 4 hours so far and I still can't work out how to do it.
All youtube videos are out of date because adobe removed the "essential control" pannels
I pay £30 a month for spending 4 hours trying to find out how to do a simple thing and still I don't know how to do it.
I have been to properties tab and it does not let me add background to my captions.
If anyone can shed any light on what I need to do then please do so. Thank you.

Select a subtitle on the timeline, go to the Properties panel and look for Appearance. There you will find Background and it´s options.

You can also redefine the style of the subs if you want them all the same.

The Properties panel is now "context aware" ... which means it changes what is shown depending on what is currently selected.
And it is very specific in what it sees as selected. So you need to select (click) on the right thing in the timeline (to select say captions track) or a specific caption to get the options for the caption track.
It's kind of annoying at first, but as you learn how it works in different places, it can become a very fast way of working. But it does require a bit of retraining muscle memory.

If you have chosen caption, you have no option to adjust the text or background.
If you have chosen subtitle you will have all options as shown by Rag and Bone

I worked out that the panel options were actually missing. The reason I could not do the subtitles was the fact I did not have the option to do so. Strangely, the original old "Essential Graphics" suddenly appeared to my right, so literally the layout changed after posting this on the forum, I have the screenshot of what I could see and there is tons missing from the panel. If you are struggling to find the options check you actually have the right options in the first place.

Which specific build are you using? As in " 25.1 build 18 " or whatever.
And was this a project created in 24.3 or in a 25.x build?

Or the 'right' version installed.
And otherwise, trying to help without OP stating which version they are on. 😐
