Premiere allows for all kinds of user controlled color management for many, many format/codec combinations. Including for iPhones.

As Ann notes, it's all about color management choices you make, in the controls for that in Premiere.

You can choose to work in HLG, an HDR format, and export to that. Or take that to SDR, the 'normal' Rec.709 format, and export to that. Either way.

But you need to set the CM for what you want to do. Tell us what you want, 'we' can tell you how to set Premiere's CM.
