I want to move an image from one edge of the video to the other, but without showing the motion in between? Like a sort of "snaps from one place to another" effect. How would I adjust the keyframes to mimic that effect?

Place a keyframe for the original position one frame before you want the jump. Place the second keyframe at the next frame (the frame that it jumps to).

Alternatively, you could cut the image clip and apply the original position properties to the first split clip and the final position properties to the second split clip.
