How can I select the transcription language? Japanese is getting recognized as English (garbage)

This is what I see:

It should be Japanese (I edit Japanese video, but prefer to have my interface in English).

There is a Language dropdown in the Create Transcript dialogue. Also, see this link that includes the supported languages at the bottom of the page:

Weird, I didn't see a language dropdown, but I installed the Japanese version and it was there (maybe I just had not updated to the most recent version?)

I had not focused on it before, but I see it in the dialogue as early as PR 2021.2 (if you had early access). So I suspect it was always there!
