Hi there, I'm trying to export an MXF file in Premiere with the audio in stereo but it's not working.
Can anyone advise on how to do this?

We need more information. Are your files is stereo? If so then your output should be stereo also.

Yes the files are in stereo but when I export, then open the mxf file in premiere the stereo looks like it has turned to mono? As in the two bars on the right panel are identical where as before export they were moving independently.

Exporting to MXF will never give you stereo as in one-track-with-two-audio-channels when you export. Left and Right comes in separate mono stems as you can see in the timeline and to give true stereo on playback you must manually fix it.
You can either right click on the file in the Project panel > Modify > Audio Channels and set the Clip Channel Format from Mono to Stereo. Or, place the exported file on the timeline and then open the Audio Track Mixer and manually pan Left to Left and Right to Right. Both methods will give you stereo playback from your computer speakers and the audio meters will reflect the difference, if any, between L/R.

No, this is the way all MXF files work. All exports export the audio in mono stems. MXF files created by video cameras are the same, iow mono stems for the audio.
I cannot test now, but i think media players such as VLC and PotPlayer are smart enough to pan the stems out to stereo when playing back. Not sure if thats the case though as i cannot test it now.
Is there any reason to why you want MXF instead of let´s say MOV (ProRes)?
