I have the same issue.

I think is a Premiere Pro thing. I began recently using it for editing some reels (so no big projects) and it is alreday taking more than 10GB of space of my Documents folder (which is with iCloud sync. because I use it for having acces whereever I am to some files, so taking Documents from iCloud is not a solution for me).

Any solutiong to make Adobe (Premiere Pro & Co) look for all the files in a local folder that is not the Documents folder?

It sounds like you are getting the cache files and such stored in that folder. Which you can set in the Program/Project Settings panel per project.
